So far the hardest part of my "to do" list by 12/12/12 is reading a book a month. Ugh. Who has time to read? I find myself doing just about anything besides reading. I did read the book Heaven is Forreal in less than 24 hours. Only one book down 11 to go! :-/
I think I found myself being able to read this book so easily is because who can argue with a child? I kept reading curious on what was going to happen next. I loved reading about the love and faith of a child!
I also got to go to Samford to hear the parents/author of this book. It wasn't exactly what I was expecting but it was still a good experience. After reading and hearing negative feedback from this book I find myself praying that noone could read this book with anything but an open heart and mind. I do not believe the parents of this boy published this book for any other reason but to help those who questioned if Heaven was Forreal.
If you haven't had a chance to read this book I challenge you to read it!

Paleo Sweet Potato Fries
Last weekend I took time to spend with my wonderful grandparents. My Daddy Glen can cook the best steak I've ever had in my lifetime. While I had him cook us a steak my nanny and I made paleo sweet potato fries. A simple but wonderful side ESP for a steak or hamburger!
Ingredients:
Sweet potatoes
Egg whites
Sea salt
Pepper
Garlic
Directions:
Peel then cut sweet potatoes in strips (like French fries)
Dip in egg whites
Season with your favorite dry seasonings. (I used sea salt, pepper, and garlic)
Bake at 350 for about 40 minutes or until fries are soft and crunchy at the same time (just like I like my chocolate chip cookies :-)
Talk about YUMMY!!! :-)

Paleo Blueberry Muffins
Tomorrow will be 4 weeks without a bite of sugar, flour, dairy, grains, legumes, processed foods, or fast food... I love PALEO! I feel great! But I have enjoyed making paleo friendly foods I craved during the last 4 weeks.
I googled several paleo blueberry muffins and combined two that I thought sounded best.
Ingredients:
5 eggs
1/2 cup melted coconut oil
3/4 cup almond milk
1 tsp vanilla
2 tbs honey
1 tsp sea salt
1 tsp baking soda
1 tsp cinnamon
1 cup coconut flour
1/2 cup almond flour
1 cup blueberries
Directions:
Preheat oven to 350
Combine wet ingredients until smooth
Mix in dry ingredients
Scoop spoonfuls into muffin liners
Bake 25 mins until golden brown
CONFESSION TIME!! --I tried to make these a few weeks ago. I took pictures of how good the batter looked (and smelled due to all the coconut) baked them for about 20 minutes and had this revelation about remembering eggs were apart of this recipe. Needless to say.... I forgot the FIVE eggs the first go around. Of course I still tasted the first batch. I concluded that without eggs this was the perfect recipe for paleo cereal. "forget" the eggs bake then let it cool off and put in bowl and add almond milk for paleo coconut blueberry cereal!
When I tried this recipe WITH eggs it was a delicious blueberry muffin! (better the second day)
